Easy Taco Casserole



1 lb of ground beef - or- turkey (lean preferably)
1 packet of Taco Seasoning mix
2/3 cup of tomato sauce
1 can (11 or 12 oz.) corn kernels, drained (Mexican or fiesta-style preferred)
8 oz. (1 cup) sour cream or softened cream cheese
1 jar Green Chili Tomatillo Salsa
8 oz. (2 cups) Shredded Mexican-blend cheese
10 or 12 corn tortillas, cut or torn into bite-size pieces (may sub tortilla chips)

Here's how to get it started....

First....You'll want to preheat your oven to 375 degrees (F)

And then....coat a 9x11 baking dish with non-stick cooking spray




Brown meat in a large skillet over Medium-High heat for 6-8 minutes and then drain.


Stir in taco seasoning mix...


And tomato sauce...


Let the mixture simmer over Medium heat for 10 minutes.


Add that "oh-so-tasty" sour cream to the mixture...


Then pop open your Mexican or Fiesta corn and pour it right in...




Stir thoroughly and then remove from heat. It looks kind of gross--I know, but oh my heck--it tastes fabulous!!


Spread half of the mixture over the bottom of prepared dish.


Break tortillas into bite-size pieces...I like to take 4-5 together and fold them in halves (3 x's) and it's just easier and faster that way.


Layer half of tortilla pieces over meat mixture...


Then add 1-cup of green chili salsa


Spread nicely over tortillas...


Then add 1-cup of cheese and layer over mixture.


You'll want to repeat this layering process with remaining ingredients to finish the casserole.

Place in the oven for 20-25 minutes
