You'll want to try this one...

Okay my friends...I have a great recipe I stumbled onto that I am super excited to share with you. I found it in this cookbook and then of course put my own little spin on it.

I am happy to say that the Hubby and Little Man went nuts over this dish when I made it for dinner recently. ;-)

Chicken Pomodoro is a chicken and pasta dish that is easy-peasy to make and oh-so- tasty!

Even's quite healthy, too!! ;-)


Here's what you'll need:

8 oz. of thin spaghetti
2 egg whites
4 tsp. of Basil-Garlic Seasoning
1/4 cup reduced-fat Parmesan cheese, grated
1 lb. chicken breast (I prefer tenderloins)
2 Tbsp. olive oil
3 tomatoes, diced (I used 15-oz. can of Italian stewed diced tomatoes instead--my favorite!)
1 green bell pepper, sliced
1 yellow bell pepper, sliced
3/4 tsp. Italian seasoning
4 Tbsp. red wine (I used chicken broth instead)

And now for the How-To...

1. Cook spaghetti.

2. In a medium mixing bowl, lightly beat the egg whites. In a pie plate, combine the Basil-Garlic seasoning and Parmesan cheese.

3. Dip chicken breasts (or tenderloins) in egg whites then into the seasoned Parmesan, coating both sides.

4. Heat olive oil in a large nonstick skillet over medium heat. Place chicken breasts in skillet; cover and cook for approximately 6 minutes; turn and cook for 6 more minutes until no longer pink in center. Transfer the cooked chicken breasts to a plate; cover with foil to keep warm.

5. Add tomatoes and bell peppers to skillet and saute over medium heat until the peppers begin to soften, approximately 3 minutes. Stir in Italian seasoning and red wine (or chicken broth), continue to cook for 2 minutes.

6. Add pasta to the skillet with sauteed tomatoes and peppers; mix gently.

7. Slice cooked chicken. Divide pasta mixture into 4 portions, top with a portion of sliced chicken, serve and enjoy! :-)

If you're like me, when I am cooking in the kitchen, I like music playing-- particularly if I am trying out a new recipe. It's calming...
